Dandy Jalapeno Poppers
I actually bought these jalapenos for Cinco de Mayo but knowing they were labor intensive I just never got around to them. Luckily they stayed fresh and here is the results. If I had known they would turn out so awesome I would have documented the construction as well.
All I did was split the peppers up to them stem, where I left them connected like a hinge, then I Stuffed them with cream cheese. Next I used a simple dry/wet/dry method of breading them. I used flour/eggs/bread crumbs. Then I put them on a tray in the freezer and forgot about them for a couple hours. (By the way, this is a pretty hands on project so if you have some plastic food handlers gloves, this is the time to break em out!)
I can't believe I've been buying these pre-made up til now. Freshness Rocks! And because they are so huge I only needed a couple to set my innards on fire. Plus I now have a supply in the freezer for the next time I want some spontaneous combustibles.
Aye Carumba!
