Do those pineapples really maintain their color throughout the baking?

Yes they did.
However, I did remove them during a short browning process under the broiler so the piggies wouldn't get tan lines.

I've been doing a big ass pan of these and then freezing the leftovers. I slice the frozen piggies and have nice little bacon/sausage slices to use in my breakfast, or as seen in the pizza down below.
